- 2 cups vegetable broth
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 1 cup shredded coleslaw mix
- 1/2 cup canned corn
- 1 teaspoon thyme
- 1 teaspoon basil
- salt
- pepper
Recipe
- 1 combine all ingredients in pot and bring to a boil.
- 2 once at a boil turn down the heat to medium.
- 3 let simmer for 25 minutes or until the vegetables are cooked through.
- 4 add salt and pepper to taste.
