Gingery-orangey Carrot Squares (vegan)

Ingredients
- 1/2 cup sugar
- 1 cup flour
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon garam masala
- 1/2 teaspoon coriander
- 1 orange, zest of
- 1/2 cup brown sugar, packed
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cups shredded carrots (not too fine)
- 3/4 cup vegetable oil
- 1 teaspoon vanilla
- 1 orange, juice of
Recipe
- 1 1. mix the dry ingredients.
- 2 2. add the carrots, vanilla and the oil, in that order.
- 3 3. add the orange juice.
- 4 4. place mix in greased 10 inch square tray, even out and bake for 60 minutes at 180c or 350°f it won't rise but it'll be done when you insert a knife and it comes out clean.
