Gingery-orangey Carrot Squares (vegan)

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1/2 cup sugar
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon coriander
  • 1 orange, zest of
  • 1/2 cup brown sugar, packed
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups shredded carrots (not too fine)
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 orange, juice of

Recipe

  • 1 1. mix the dry ingredients.
  • 2 2. add the carrots, vanilla and the oil, in that order.
  • 3 3. add the orange juice.
  • 4 4. place mix in greased 10 inch square tray, even out and bake for 60 minutes at 180c or 350°f it won't rise but it'll be done when you insert a knife and it comes out clean.
