Citrus Rum Chicken

Ingredients
- 4 chicken breasts
- 1/4 red bell pepper
- 1/4 green bell pepper
- 1/2 onion
- 4 ounces diet coke
- 3 slices lemons
- 15 baby carrots
- 1 (6 ounce) can pineapple chunks in juice
- 2 dashes rum
- 2 tablespoons honey (sugar-free)
- 1/4 cup splenda granular
- 2 tablespoons brown sugar
- 5 tablespoons light soy sauce
Recipe
- 1 cut up veggies in small pieces, not carrots.
- 2 cut onion in bite size pieces.
- 3 cut chicken up into 1 inch pieces.
- 4 place lemon slices on bottom of crock pot with carrots and onion and pineapple, lay chicken over that and add.
- 5 remaining ingredients in crock pot.
- 6 stir together, and let soak in fridge over night.
- 7 cook on low for up to 6 hours, or on high for 3 hrs (every crock pot is different).
- 8 enjoy with rice or brown rice.
