Citrus Rum Chicken

Total Time: 3 hrs 25 mins Preparation Time: 25 mins Cook Time: 3 hrs

Ingredients

  • 4 chicken breasts
  • 1/4 red bell pepper
  • 1/4 green bell pepper
  • 1/2 onion
  • 4 ounces diet coke
  • 3 slices lemons
  • 15 baby carrots
  • 1 (6 ounce) can pineapple chunks in juice
  • 2 dashes rum
  • 2 tablespoons honey (sugar-free)
  • 1/4 cup splenda granular
  • 2 tablespoons brown sugar
  • 5 tablespoons light soy sauce

Recipe

  • 1 cut up veggies in small pieces, not carrots.
  • 2 cut onion in bite size pieces.
  • 3 cut chicken up into 1 inch pieces.
  • 4 place lemon slices on bottom of crock pot with carrots and onion and pineapple, lay chicken over that and add.
  • 5 remaining ingredients in crock pot.
  • 6 stir together, and let soak in fridge over night.
  • 7 cook on low for up to 6 hours, or on high for 3 hrs (every crock pot is different).
  • 8 enjoy with rice or brown rice.
