Fruitful Bran Muffins

Ingredients

- 1 3/4 cups skim milk
- 2 teaspoons lemon juice
- 1/4 cup non-hydrogenated margarine
- 1 egg, lightly beaten
- 1 orange, rind of
- 1 3/4 cups whole wheat flour
- 1 1/3 cups all-bran cereal or 1 1/3 cups bran flakes, slightly broken up with your hands
- 1/3 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 1/2 teaspoons cinnamon
- 2/3 cup apple, finely chopped
- 3/4 cup carrot, grated
- 1/2 cup dried apricot, chopped
- 1/2-2/3 cup apples, coarsely chopped or 1/2-2/3 cup chocolate chips
Recipe
- 1 chop up apricots. place in about 2/3 cup boiled water and let sit for about 20 minutes till plump and softened; drain all water out and set plumped apricots aside.
- 2 in a large bowl, combine milk, lemon juice, egg, and orange rind.
- 3 in a medium bowl combine flour, all-bran cereal, brown sugar, baking soda, baking powder and cinnamon.
- 4 add flour mixture to the wet ingredients and stir until almost mixed; fold in grated carrots, chopped apple and apricots just till mixed.
- 5 spray muffin tin with cooking spray; fill muffin tins until almost full and sprinkle chopped apples or chocolate chips on top of each muffin.
- 6 bake at 375°f for 15 to 20 minutes or until toothpick inserted into the centre of the muffin comes out clean; let stand in pan for a couple of minutes before cooling muffins on a wire rack.
