Greaseless Meatloaf With Piquant Sauce

Total Time: 2 hrs 30 mins Preparation Time: 1 hr 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 2 lbs ground beef (90% lean)
  • 1/4 cup italian breadcrumbs (i use progresso.)
  • 1/2 cup potato, grated raw
  • 1/2 cup onion, chopped
  • 2 tablespoons fresh chives, chopped
  • 1/2 cup raw carrot, shredded
  • 1 cup cream-style cottage cheese
  • 1 egg
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 cup ketchup
  • 3 tablespoons brown sugar
  • 1 teaspoon dry mustard (ground spice)
  • 1/4 teaspoon nutmeg

Recipe

  • 1 lightly mix together all ingredients until well blended.
  • 2 shape into two loafs (9x5x3) in a shallow pan.
  • 3 in a small bowl, mix together all 4 piquant sauce ingredients until well blended (not lumpy).
  • 4 “frostâ€? both loafs starting with the sides and finish with the top.
  • 5 bake in a 350 degree oven for 1 hour.
  • 6 allow to cool for 5 minutes before cutting.
