Italian Tomato Spinach Tortellini Soup

Ingredients
- Servings: 8
- 2 cans chicken broth
- 2 cans diced tomatoes
- 1 package cheese-filled egg tortellini
- 1 can pinto beans or 1 can lamb and beans
- 1 can spinach
- 1 zucchini, chopped
- 1 green bell pepper, chopped
- 2 celery ribs, chopped
- 2 carrots, sliced
- 1 tablespoon olive oil
- 1 tablespoon garlic powder
- 1 tablespoon parsley flakes
- pepper, to taste
Recipe
- 1 combine all ingredients in large pot, bring to a boil over high heat, reduce heat to medium and cook for 20 min.
- 2 stirring occasionally.
- 3 note: presentation of this soup is not pretty, it will look like grass clippings with vegetables.
- 4 however it is very tasty, if you are a fan of spinach.
