Italian Tomato Spinach Tortellini Soup

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 2 cans chicken broth
  • 2 cans diced tomatoes
  • 1 package cheese-filled egg tortellini
  • 1 can pinto beans or 1 can lamb and beans
  • 1 can spinach
  • 1 zucchini, chopped
  • 1 green bell pepper, chopped
  • 2 celery ribs, chopped
  • 2 carrots, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon parsley flakes
  • pepper, to taste

Recipe

  • 1 combine all ingredients in large pot, bring to a boil over high heat, reduce heat to medium and cook for 20 min.
  • 2 stirring occasionally.
  • 3 note: presentation of this soup is not pretty, it will look like grass clippings with vegetables.
  • 4 however it is very tasty, if you are a fan of spinach.
