Lucy's Fabulous Beef Stew

Total Time: 8 hrs Preparation Time: 8 hrs

Ingredients

  • Servings: 4
  • 1 1/2 lbs stew beef chunks
  • 1 large yellow onion, chopped
  • 5 stalks celery, sliced thinly
  • 1 green pepper, chopped (1 " pieces)
  • 1 (14 ounce) can stewed tomatoes
  • 3 small potatoes, cubed
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon sugar
  • 2 tablespoons minute tapioca
  • 1 1/2 cups chopped carrots (optional)
  • 1 bay leaf (optional)

Recipe

  • 1 layer vegetables on bottom of crock pot.
  • 2 add 1 bay leaf.
  • 3 sprinkle salt, pepper, sugar & tapioca on mixture.
  • 4 place bay leaf on vegetables.
  • 5 add the beef.
  • 6 pour can of stewed tomatoes on top of ingrediants.
  • 7 cook on low for 8 - 10 hours, depending on how you like your vegetables (firm or soft).
  • 8 an hour before serving add some
  • 9 pearl onions.
