Gingered Chicken And Fried Rice

Ingredients

- 4 chicken drumsticks
- 2 tablespoons fresh ginger, grated (1 inch piece)
- 2 tablespoons soy sauce
- 2 large carrots, chopped
- 15 ounces cooked rice
- 8 ounces sugar snap peas
- 1/2 cup red pepper, chopped (optional)
- 4 eggs, beaten
- green onion, sliced for garnish (optional)
- soy sauce, for garnish (optional)
- toasted sesame oil (to garnish) (optional)
Recipe
- 1 in a large skillet, heat 1 tablespoon oil over medium high heat; add chicken, half the ginger, and soy sauce.
- 2 brown chicken on all sides, then add 1/2 cup water; cook, covered, until chicken is cooked through, about 15 minutes.
- 3 meanwhile, microwave carrots, remaining ginger, and 2 tablespoons water on high for 4 minutes; add rice, peas, red pepper (if using) and cook, covered, for 5 minutes, stirring twice.
- 4 remove chicken and juices from the skillet; wipe dry.
- 5 add eggs, cooking and stirring, for 30 minutes until scrambled; stir in rice mixture, heat through.
- 6 serve chicken and juices with fried rice, garnish with green onions and soy sauce, if desired.
