Homemade Chicken Soup

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 1 small roasting chicken, whole
  • 1 small onion
  • 12 ounces diced tomatoes
  • 1 cup carrot
  • 3 tablespoons chicken bouillon (more to taste)
  • 1 (8 ounce) box orzo pasta

Recipe

  • 1 wash chicken and remove bag of parts from cavity. throw them away. wash inside of chicken.
  • 2 put chicken in large pot and cover with water.
  • 3 bring water to boil.
  • 4 turn water down and gently cook for 1 hour - chicken should be falling off the bones.
  • 5 take chicken out of water and allow to cool.
  • 6 add to water: chopped up onion, can of diced tomatoes, chopped carrots, 1 tsp of "better than bouillon" (taste to see if more is needed).
  • 7 break up chicken and pull all meat off bones into very small pieces.
  • 8 put chicken pieces back into stock.
  • 9 cook for another hour.
  • 10 cook a box of orzo noodles separately, rinse, add to stock. - orzos are going to grow so don't add too much.
  • 11 eat.
