Crunchy Pea Salad With Miso Dressing

Total Time: 18 mins Preparation Time: 15 mins Cook Time: 3 mins

Ingredients

  • Servings: 12
  • 1/4 cup water
  • 2 tablespoons seasoned rice vinegar
  • 2 tablespoons light yellow miso
  • 2 tablespoons bottled minced ginger
  • 1 1/2 tablespoons mirin (sweet rice wine) or 1 1/2 tablespoons grape juice
  • 1 tablespoon dark sesame oil
  • 1 1/2 teaspoons fresh lemon juice
  • 1 garlic clove, minced
  • 1 (16 ounce) package frozen tiny peas, thawed
  • 2 cups matchstick-cut carrots
  • 1 cup diced seeded cucumber (about 1 small)
  • 1/2 cup sliced green onion (about 4)
  • 1/4 cup sliced almonds, toasted

Recipe

  • 1 combine first 8 ingredients in a small bowl, stirring with a whisk until blended.
  • 2 combine peas and next 4 ingredients in a medium bowl. add dressing, and toss gently.
