Ingredients

- 1/4 cup water
- 2 tablespoons seasoned rice vinegar
- 2 tablespoons light yellow miso
- 2 tablespoons bottled minced ginger
- 1 1/2 tablespoons mirin (sweet rice wine) or 1 1/2 tablespoons grape juice
- 1 tablespoon dark sesame oil
- 1 1/2 teaspoons fresh lemon juice
- 1 garlic clove, minced
- 1 (16 ounce) package frozen tiny peas, thawed
- 2 cups matchstick-cut carrots
- 1 cup diced seeded cucumber (about 1 small)
- 1/2 cup sliced green onion (about 4)
- 1/4 cup sliced almonds, toasted
Recipe
- 1 combine first 8 ingredients in a small bowl, stirring with a whisk until blended.
- 2 combine peas and next 4 ingredients in a medium bowl. add dressing, and toss gently.
