Healthy Orange And Date Muffins

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 1 cup carrot (grated)
  • 2/3 cup dates (chopped)
  • 1/2 cup sunflower seeds
  • 1 1/2 cups wheat bran
  • 1 1/2 cups plain flour
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 egg (lightly beaten)
  • 2 tablespoons butter (melted)
  • 1 1/2 cups orange juice
  • 1/2 cup plain nonfat yogurt

Recipe

  • 1 preheat oven to 200°c.
  • 2 in a large bowl combine bran, flour, sugar, sunflower seeds, baking powder and bicarb.
  • 3 in a medium bowl,combine carrots, dates, orange juice, orange zest,egg and melted butter.
  • 4 make a well in the centre of the dry ingredients and pour the wet ingredients into the centre.
  • 5 mix lightly untill all ingredients combined. don't overmix, the mixture can still be a bit lumpy and this will make the muffins lighter.
  • 6 spoon into a muffin tin, don't use paper cases, just brush the tin lightly with melted butter.
  • 7 bake in oven for 20 minutes or until skewer insterted into the centre comes out clean.
