Healthy Orange And Date Muffins

Ingredients
- 1 cup carrot (grated)
- 2/3 cup dates (chopped)
- 1/2 cup sunflower seeds
- 1 1/2 cups wheat bran
- 1 1/2 cups plain flour
- 1/3 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate of soda
- 1 egg (lightly beaten)
- 2 tablespoons butter (melted)
- 1 1/2 cups orange juice
- 1/2 cup plain nonfat yogurt
Recipe
- 1 preheat oven to 200°c.
- 2 in a large bowl combine bran, flour, sugar, sunflower seeds, baking powder and bicarb.
- 3 in a medium bowl,combine carrots, dates, orange juice, orange zest,egg and melted butter.
- 4 make a well in the centre of the dry ingredients and pour the wet ingredients into the centre.
- 5 mix lightly untill all ingredients combined. don't overmix, the mixture can still be a bit lumpy and this will make the muffins lighter.
- 6 spoon into a muffin tin, don't use paper cases, just brush the tin lightly with melted butter.
- 7 bake in oven for 20 minutes or until skewer insterted into the centre comes out clean.
