Italian Tortelloni Bolognese

Ingredients
- 1 onion, large
- 2 carrots, peeled
- 2 celery ribs
- 4 -6 garlic
- 1 lb ground beef
- 1 lb italian sausage, bulk
- 2 cups red wine
- 36 ounces tomatoes, ground
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried sage
- 2 teaspoons salt
- 1 teaspoon pepper
- 1/4-1/2 teaspoon red pepper flakes
- 4 tablespoons fresh parsley, chopped
- 1/2 tablespoon italian seasoning
- 24 ounces marinara sauce, i like newmans cabernet marinara
- 1 1/2 cups bell peppers, diced mixed colors, not green pepper
- 1 cup spinach, fresh chop slightly
Recipe
- 1 place first 4 ingredients in processor and fine chop.you may also do tomatoes in processor.use fresh ,canned or frozen or thawed tomatoes with puree.
- 2 cook and drain meats.
- 3 add all to large pot and bring to boil,simmer on low for 2 hours.
- 4 serve with cooked tortelloni and drained top with parmesean cheese.full recipe takes 4 pound tortelloni -- adjust to your needs.
