Lots Of Tomatoes Beef Stew

Total Time: 5 hrs 45 mins Preparation Time: 15 mins Cook Time: 5 hrs 30 mins

Ingredients

  • 2 lbs extra-lean beef stew meat, trimmed of fat
  • 5 -6 carrots, cut into 1 inch pieces
  • 1 large onion, cut in chunks
  • 3 celery ribs, sliced
  • 6 medium tomatoes, cut up and gently mashed
  • 1/2 cup cups quick-cooking tapioca
  • 1/2 teaspoon ground cloves
  • 1 teaspoon basil
  • 1/2 teaspoon dried oregano
  • 2 bay leaves
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 4 potatoes, cubed

Recipe

  • 1 place all ingredients in a slow cooker, and mix together well.
  • 2 cover, and cook on high 5 1/2- 6 hours.
  • 3 if juices are too thin, add 2-3 tablespoons instant mashed potatoes.
