Healthy Vegetable, Beef, And Barley Soup

Ingredients
- 1 lb ground beef or 1 lb ground turkey
- 1 medium onion
- 3 minced garlic cloves
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon celery seed
- 1 teaspoon parsley
- 1 teaspoon black pepper
- 2 cups canned tomatoes (or 4 fresh)
- 5 medium carrots, chopped
- 2 cups frozen corn
- 2 cups zucchini, chopped
- 2 bay leaves
- 1 cup pearl barley, dry
- 10 cups water
- 6 teaspoons beef bouillon
- 1 tablespoon worcestershire sauce
- 1 tablespoon salt (optional)
- 1/4 cup red wine (optional)
Recipe
- 1 in a large soup pot over medium heat cook ground meat, onion, and garlic until meat is no longer pink.
- 2 add spices and cook for another couple of minutes. (this will smell delicious!)
- 3 add all remaining ingredients, turn to high heat and bring to a good rolling boil, then reduce heat and simmer for about an hour. enjoy!
