Healthy Vegetable, Beef, And Barley Soup

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 1 lb ground beef or 1 lb ground turkey
  • 1 medium onion
  • 3 minced garlic cloves
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon celery seed
  • 1 teaspoon parsley
  • 1 teaspoon black pepper
  • 2 cups canned tomatoes (or 4 fresh)
  • 5 medium carrots, chopped
  • 2 cups frozen corn
  • 2 cups zucchini, chopped
  • 2 bay leaves
  • 1 cup pearl barley, dry
  • 10 cups water
  • 6 teaspoons beef bouillon
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon salt (optional)
  • 1/4 cup red wine (optional)

Recipe

  • 1 in a large soup pot over medium heat cook ground meat, onion, and garlic until meat is no longer pink.
  • 2 add spices and cook for another couple of minutes. (this will smell delicious!)
  • 3 add all remaining ingredients, turn to high heat and bring to a good rolling boil, then reduce heat and simmer for about an hour. enjoy!
