Gingered Cucumber Carrot Salad

Ingredients

  • Servings: 2
  • 1 medium cucumber, peeled, halved lengthwise, seeded, and thinly sliced
  • 2 small carrots, thinly sliced
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic vinegar
  • 3/4 teaspoon minced fresh gingerroot
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 combine cucumber, carrots, and parsley in a bowl.
  • 2 in a small bowl, whisk together the remaining ingredients. pour over salad and toss to coat. refrigerate until serving. serve with a slottd spoon.
