Gingered Cucumber Carrot Salad

Ingredients

- 1 medium cucumber, peeled, halved lengthwise, seeded, and thinly sliced
- 2 small carrots, thinly sliced
- 2 tablespoons minced fresh parsley
- 1 tablespoon olive oil
- 2 teaspoons balsamic vinegar
- 3/4 teaspoon minced fresh gingerroot
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 combine cucumber, carrots, and parsley in a bowl.
- 2 in a small bowl, whisk together the remaining ingredients. pour over salad and toss to coat. refrigerate until serving. serve with a slottd spoon.
